The neighborhood taqueria is a good place to start your taste adventure. They are small and, generally, family owned. You place your order at the counter and a server will bring your food to your table. There's a wide range of menu offerings written on a large board over the counter. You'll see a salsa bar where you can help yourself to sauces and salsas.

Then there's the small restaurant. Guests seat themselves at a table and wait for service. Servers come armed with menus, bowls of corn chips and house salsa. The chips and salsas are refilled throughout the meal. As with the taqueria, there's a huge selection of menu items. They include specialty items such as Steak Ranchero, and Chicken Mole.

The larger establishments are festive, with lots of atmosphere. There will be themed decor and live entertainment on the weekends. Unlike the other types of restaurants, the chef's area is out of sight of the diners. Cocktails are available, especially Margaritas, a tequila drink made with lime juice and triple sec. House specials are recommended at these restaurants for trying the best of this cuisine.

The most basic fare that can be found in any of these restaurants is the burrito. It is a rolled tortilla stuffed rice, beans, salsa, cheese, avocado cilantro and shrimp or any one of the meats offered. They can be served dry or wet. A wet burrito is covered with a spicy sauce and fresh cheese.

A favorite item is the chile relleno. A pasilla pepper is boiled, then cut open and stuffed with cheese. It is then rolled in breading or eggs and fried. Chiles relleno are usually served in a tomato sauce with melted cheese.

Seafood is standard at most Mexican restaurants. Shrimp are served in huge cocktail glasses brimming with tomato sauce. It's also the main ingredient in tomato-based and cream soups, or in fiery hot sauces. Whole fish are fried and served on platters. Fish tacos are in demand in any venue.

Don't forget to try desert before you leave. You'll probably get to experience someone's grandmother's special recipe for flan, a type of custard pudding that is baked and then drenched in caramel sauce. Pair it with a cup of strong dessert coffee and you've had a wonderful meal. Experience the flavors at the best Mexican restaurants.
